    I guess I’ll add this since a few people don’t know. A fair number of grocery store whole chickens have a salt water solution injection to make the chicken look better. Sooo, a salt brine might cause some road ice melting chicken instead of good chicken.

    Just to clarify; after dry brining...do you wash the chicken down so that it's not extremely salty?

    I just pulled my bird out of the oven about 45 minutes ago. I already have a chicken noodle soup going that is using this chicken. I rinsed off the salt after a 24 hour, give or take like half an hour brine. The only part that I can say is a bit too salty is the skin and that is probably because I used salted butter for the under the skin rub. One thing that is very prominent is the flavor!!!
    This has such a huge amount of flavor and I honestly can't believe that I made it!!!
    I don't remember the name of the sauce that he puts on at the end put it is totally worth doing! It really brings the flavors together into a wonderful collide of flavor.
    I am GOING to make this again very soon. I am going to use unsalted butter next time to see if that makes the skin a bit better.
    (I do love salty things though so I didn't mind how it was)
