    Peter Castellucci no, they didn’t. Corn is a new world food. Grits and cornmeal mush both predate polenta. Calling cornmeal mush by an Italian name doesn’t magically make it different.

  • +herrdoktorprofessor It's standard automation. You can automate part of the process, in this case the turning the heat on-off, and adjusting the temperature, to free you to do something else. It does nothing new, just makes the less interesting/ fulfilling/ demanding human activities less of a chore. Same as Excell, or Word, or auto-correctors, or bus passess and credit cards.     ... but a basic pressure cooker requires baby sitting and it won't automatically turn off the heat by itself. With my instant Pot, making bone broth while I sleep is possible. By the time I wake up, the broth has cooled a bit and I can put it in the fridge.

    I really hope Bon Appetit includes their other food editors more. Brads series is one of my favourites but I find Carla and Claire and even Andy to be so charming, interesting and entertaining to watch. I wish they’d all get their own “show”.
