DOP is Italian for PDO (Protected Designation of Origin). It's the reason you can't advertise and charge extra for those tomatoes outside of Italy, just like you can't officially call a cheese Feta or San Mihali if it's produced outside of Greece etc.

    You’re nervous!!!! That’s fun....
I do have an actual question though. Is there a reason for you not layering your mac & cheese when you put it in the casserole dish. Do you prefer not to do it, or is it some other reason. If unaware, the layering I was taught was a layer of Mac, custard, and then more cheese then Mac, custard, cheese and repeat until the casserole dish is full before adding your crunchy topping and more cheese then baking.

"whats with the daddy stuff" Well theres many people these days that have major daddy issues. pretty soon they will be asking you to buy them a new car and if you get them one they will cry because it is the wrong color.
And "mise en place" means set up or directly translates to "setting in place" culinary arts LOVES unnecessarily using french.
