    Here is the recipe written down if anyone wants it:

    Ingredients ~
    1 cup bread flour
    3/4 cup AP flour
    2 tsp kosher salt
    1 tsp baking soda
    1 cup butter melted (browned)
    1 cup dark brown sugar
    1/2 cup white sugar
    2 tsp vanilla extract
    1 tsp espresso powder
    1 egg
    1 egg yolk
    1/2 cup semi-sweet chocolate chips
    3/4 cup dark chocolate chunks

    Method ~

    1. Preheat oven to 180 °C / 350 °F
    2. Mix flours, salt and baking soda
    3. Brown butter in a saucepan and then pour into a measuring cup to cool. Add cold water to make butter exactly 1 cup. Leave to cool to room temp
    4. Mix sugars, vanilla, espresso powder and butter in a bowl until creamed.
    5. Incorporate flour mixture in thirds, but leave some unincorporated
    6. Add chocolate and fold in with the mixture and the remaining flour
    7. Scoop dough into hemispheres and place on baking sheet on top of a baking tray. Leave in the fridge to cool overnight, or chill for an hour, for best flavour outcome.
    8. Bake for 12-14 mins at 180 °C / 350 °F in the centre of the oven
